My uncle raised a lot of chickens for the table and to furnish eggs for the family. He didn’t keep them up in a chicken lot, he just let them run free around the farm.
In the springtime, he would hatch off a lot of baby chicks to raise as frying chickens. He would kill these while they were not quite grown so they would be tender enough to fry. and tough to fry tender, he decided to make chicken and dumplings. He just cleaned the chicken and hawk both and put them in the pot together. He said once they got done and he made dumplings on them, you couldn’t tell the difference in them. They were both good.
