The recent sunshine has been a welcome sight to all, especially the Eastern Bluebirds. At ECCO we have a lovely planter birdhouse that is more like a bird condominium and I saw four bluebirds perched on top as if to say, “We’re ready to set up housekeeping.” I’m sure as you know by now, I love watching birds, but even more so since my friend Don Billet began photographing them last summer at ECCO.
Friends of Marie Starr will be glad to hear that her shoulder surgery was a success and she’s anxious to come home. We miss both Marie and Sheldon and look forward to their return. Marie and I talk two or three times a week and she’s beginning to sound a little homesick.
Last week during the big snowstorm when most folks in their right minds didn’t have to get out but preferred to stay snug indoors, ECCO volunteers braved the icy roads to work at the center. The Christmas season with its many projects kept us so busy, we had very little time to sort items for the thrift store. But we made tremendous progress and I have a sore back to prove it. A big thanks to Liz, Rod, Maxine and Phyllis.
We also want to thank Cumberland River Coal Co. for its generous donation of $250 for our food pantry.
Sharon Bird will be having knee surgery soon and we ask that you lift her up in your prayers.
I was also saddened to hear that Stephanie Estep will be taking another round of chemo, which I hear will be very aggressive. Stephanie is a young wife and mother fighting the worst battle imaginable. Please, remember her in your prayers.
I have a recipe for Blueberry Crunch Cake given to me by Sharon Bird I’d like to share with you. It’s easy, but so good. I had unexpected company one evening for dinner and had to whip up a quick dessert and found this one to be perfect for the last minute. Blueberry Crunch Cake — 1 20-ounce.can crushed pineapple in juice, 1 21- ounce can blueberry pie filling, 1 box butter recipe cake mix, 1 cup chopped pecans, 3/4 cup melted butter. Preheat oven to 350 degrees. Pour pineapple with juice into 9×13-inch pan, spread evenly over bottom, spoon pie filling evenly over pineapple, sprinkle dry cake mix over pie filling and level with a fork. Sprinkle pecans evenly over cake mix, drizzle with melted butter and bake 35 to 45 minutes (depending on your oven) or until brown and bubbly. Serve warm with whipped topping.

Community Bulletin Board: Bible study each Monday evening at ECCO beginning at 7 p.m. Good News Club meets each Wednesday at the Eolia Mission for ages three and up 6:30-7:30 p.m. Cumberland River Volunteer Fire Department meets the second Sunday of each month 11 a.m. at the Partridge Station, volunteers welcome. Partridge Lions Club meets the first and third Tuesday of each month at 6:30 p.m. at the Ovenfork Senior Citizens Center, come and bring a guest.
