Carrot, Radish and Grapefruit Salad
2-1/2 cups shredded carrots
6 radishes, thinly sliced
2 red grapefruits, peeled and cut into segments (without white pith and membrane)
2 tablespoons snipped fresh chives
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1. Combine all ingredients along with the juice squeezed from the leftover grapefruit membranes. Serves 4.
• Each serving: About 73 calories, 18g total carbohydrate, 2g protein.
