Homeless shelter receives donation

Greetings to all from the Eolia Christian Community Outreach Center.

“And if thou draw out thy soul to the hungry, and satisfy the afflicted soul; then shall thy light rise in obscurity, and thy darkness be as the noon day . . .” Isaiah 58;10.


The Saving Grace Homeless Shelter greatly appreciates the Premium Baptist Church for their participation in sponsoring the shelter by pledging a monthly donation of $50. We pray they will receive a heaped up and flowing over blessing for considering Saving Grace in their giving.

During March the shelter housed 18 people, and it is our vision that some day to have a larger facility with live in staff. As of now Saving Grace is operated on a totally volunteer basis. Any church or organization interested in sponsoring the shelter can call Diane Watts at 606-589-5976 or 606-634-8270.

Dameris Sexton and Christy Kincer from the UK and Letcher County Extension Office, SNAP Education Assistance with Nutritional Education Pro- gram, paid us a welcome visit. Taking note of the food items in our boxes, they came up with a couple of delicious recipes using those items. The following Pantry Day they set up a table with samples, brochures and copies of the recipes to hand out to our clients.

The following is one of the recipes, Apple and Chicken Salad: 2 red apples, 2 celery stalks diced, 2 cups cooked and diced chicken breasts or turkey, ¼ cup plain non-fat Greek yogurt, ½ cup raisins, ¼ cup light mayo, ¼ tsp. salt, ¼ tsp. black pepper, lettuce.

Directions: Cut apples in quarters; remove core and chop. In bowl mix all ingredients except lettuce. To serve arrange lettuce on plates and top with salad.

We appreciate Dameris and Christy for thinking of ECCO and welcome them back anytime.

With that said, I’ll close with this thought for the day. You can give without loving, but you can’t love without giving.

This week our prayer list includes Jan Galloway, Dovey Maggard, Verdell and Vernie Sturgill, Shirley and Harry Sturgill, Betty Maggard, Clay Sturgill, Gloria Beachy, Garland and Carolyn Couch, Nora Walker, Marie Snell, Gay Sturgill, Sheldon and Marie Starr, Neil Adams, and Brenda Gross.

Also lift up in prayer those struggling with drug and alcohol addiction, may they be delivered, our military troops around the world, the United States, our President, the leaders of our country, all the children hurt by war, and the ministry of ECCO.
