Las Peñas Mexican restaurant will open Thursday at Lakeside in Jenkins. A ribbon-cutting ceremony will begin at 10 a.m. and food service will begin at 11 a.m.
Las Peñas owner Charles Colwell entered into a lease agreement with the City of Jenkins to occupy a renovated house located beside the zero-entry level pool.
Bert Fields, former owner of Kentucky Water Company, disassembled old water tanks and used the California redwood as ceiling beams in his house. The carport has been transformed into an extra dining room, which matches the existing interior. With the additional area, the restaurant occupies 3,380 square feet, which also includes a large kitchen, a serving area and a business office.
The menu at Jenkins will be the same as the one offered at Las Peñas in Whitesburg, which is also owned by Colwell.
Colwell is applying with the state Alcoholic Beverage Control (ABC) for a limited restaurant license, which requires mixed drinks, beer and wine to be served at a table by a member of the wait staff.
