Pizza Meat Loaf





 

 

This main dish gives a different twist to a family favorite.
Tom’s Pizza Meat Loaf
16 ounces extra-lean ground
sirloin beef or turkey breast
1 (2.5-ounce) jar sliced mushrooms,
drained
1/2 cup chopped onion
1/3 cup sliced ripe olives
1/4 cup reduced fat parmesan
style grated topping
1/2 cup plus 1 tablespoon
dried fine bread crumbs
2 teaspoons pizza seasoning
1 (8-ounce) can tomato sauce
1 teaspoon dried parsley
flakes
2 (3/4-ounce) slices reducedfat
mozzarella cheese

Preheat oven to 350 F. Spray a 9-by-5-inch loaf pan with olive oil-flavored cooking spray. In a large bowl, combine meat, mushrooms, onion, olives, Parmesan cheese, bread crumbs, 1 teaspoon JO’s Pizza Seasoning and 1/3 cup tomato sauce. Mix well to combine. Pat mixture into prepared loaf pan. Bake for 45 minutes.

Stir parsley flakes and remaining 1 teaspoon JO’s Pizza Seasoning into remaining 2/3 cup tomato sauce. Spoon sauce mixture evenly over partially baked meat loaf. Cut mozzarella cheese slices in half diagonally. Evenly arrange cheese pieces over top. Continue baking for 15 minutes. Place meat loaf on a wire rack and let set for 5 minutes. Cut into 6 servings.
