There is nothing better than fresh veggies straight from the garden!
Farmer’s Market Salad
1/3 cup nonfat sour cream
2 tablespoons fat-free mayonnaise
1 tablespoon chopped fresh parsley
or 1 teaspoon dried parsley flakes
1/8 teaspoon black pepper
1 cup diced unpeeled cucumber
1/2 cup sliced red radishes
1 1/2 cups diced fresh tomatoes
1/4 cup chopped green onion
In a large bowl, combine sour
cream, mayonnaise, parsley and black
pepper. Add cucumber, radishes,
tomatoes and onion. Mix well to combine. Serve at once. Makes 4 (1/2 cup)
